Pesto Italian Pasta Salad

Ingredients
1 package Garo Farfalle Pasta
1 head romaine lettuce
1 small red onion
200 g Italian salami
1 La Famiglia mozzarella ball
1 jar Italissima basil pesto
1 clamshell cherry tomatoes
1 long English cucumber
Directions
Bring a large pot of salted water to a boil and cook the farfalle pasta until al dente. Drain, then rinse under cold water until completely cooled. Set aside to drain well.
While the pasta cools, prep your ingredients: wash and chop the romaine into bite-sized pieces, slice the red onion into thin half-moons, cut the salami into strips, halve the cherry tomatoes, chop the cucumber into bite-sized pieces, and cut the mozzarella into small chunks.
In a large salad bowl, add the cooled pasta and toss with 4 heaping tablespoons of basil pesto until evenly coated.
Add the chopped romaine and toss again, then add the salami, cherry tomatoes, cucumber, red onion, and mozzarella. Gently toss everything together until well combined.
Serve immediately, or chill until ready to enjoy. Delicious as a meal on its own or served with warm garlic bread or focaccia on the side.
