Pesto Italian Pasta Salad

Ingredients

  • 1 package Garo Farfalle Pasta

  • 1 head romaine lettuce

  • 1 small red onion

  • 200 g Italian salami

  • 1 La Famiglia mozzarella ball

  • 1 jar Italissima basil pesto

  • 1 clamshell cherry tomatoes

  • 1 long English cucumber

  • Directions

  • Bring a large pot of salted water to a boil and cook the farfalle pasta until al dente. Drain, then rinse under cold water until completely cooled. Set aside to drain well.

  • While the pasta cools, prep your ingredients: wash and chop the romaine into bite-sized pieces, slice the red onion into thin half-moons, cut the salami into strips, halve the cherry tomatoes, chop the cucumber into bite-sized pieces, and cut the mozzarella into small chunks.

  • In a large salad bowl, add the cooled pasta and toss with 4 heaping tablespoons of basil pesto until evenly coated.

  • Add the chopped romaine and toss again, then add the salami, cherry tomatoes, cucumber, red onion, and mozzarella. Gently toss everything together until well combined.

  • Serve immediately, or chill until ready to enjoy. Delicious as a meal on its own or served with warm garlic bread or focaccia on the side.
