Panko Crusted Chicken & Caesar Salad

Ingredients

2 chicken breasts sliced in half lengthwise

1.5 cups panko

2 eggs

2 romaine hearts chopped

1 package of bacon bits

1 cup parmesan cheese

Hofstede’s Caesar Dressing

Directions:

  1. Add panko breadcrumbs to a medium-sized bowl.

  2. In another bowl, crack 2 eggs and whisk until combined.

  3. Slice two chicken breasts in half lengthwise to create thinner pieces.

  4. Dip each chicken piece into the egg, then into the panko. Press the panko onto the chicken if needed.

  5. Place the chicken on the grill over medium heat and cook until fully cooked through.

  6. While the chicken cooks, chop romaine hearts and place them in a large bowl.

  7. Add bacon bits, parmesan cheese, and Caesar dressing to the romaine (add as much or as little dressing as you like). Toss to combine.

  8. Once the chicken is done, plate it and top with the Caesar salad.

  9. Serve and enjoy with a knife and fork.
