Loaded Nacho “Islands”

Ingredients

  • 1 bag La Cocina thick-cut tortilla chips

  • 1lb ground beef cooked and seasoned with Taco About Tasty (The Spice Age)

  • 1 red pepper diced

  • 1 green pepper sliced or diced (You choose)

  • 1 small sweet onion, diced

  • 2 green onion, diced

  • 1 cup grape tomatoes chopped

  • 1/2 jar I’m Pickled banana peppers

  • 1/4 cup fresh cilantro, lightly chopped

  • 1 avocado diced

  • 1 bag Armstrong Tex Mex shredded cheese

    For Crema

  • 1/2 cup Greek yogurt

  • 1/2 cup mayonaise

  • 2 tbsp diced chipotles in sauce

  • 2 tbsp fresh diced cilantro

  • 3 tbsp milk or cream

    Instructions

    1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    2. Arrange tortilla chips into 8 separate “islands”, each in a loose circular shape. Keep space between them for easy scooping later.

    3. Layer each island with:

      • shredded cheese

      • cooked ground beef

      • bell peppers

      • onions

      • tomatoes

      • banana peppers

      • and more cheese (always more cheese).

    4. Bake for 8–10 minutes, or until cheese is fully melted and bubbly.

    5. While the nachos bake, mix your crema ingredients and let stand.

    6. Remove nachos from the oven and top with crema, fresh avocado, and cilantro.

    7. Serve immediately and enjoy!
