Greek Sheet Pan Dinner

Ingredients
2 chicken breasts cut into large bite-sized chunks
2 large bell peppers, cut into bite-sized chunks
1 large sweet onion, cut into large bite-sized chunks
3/4 cup crumbled feta
3/4 cup of grape tomatoes sliced in half
1 pkg pita bread
1 small container of tzatziki
6 tbsp souvlaki seasoning
olive oil
Instructions
Preheat your oven to 400°F.
In a large bowl, toss the sliced chicken with 2 tbsp souvlaki seasoning and a drizzle of olive oil until evenly coated.
Spread the seasoned chicken in a single layer on a parchment-lined baking sheet.
Bake for 20 minutes.
While the chicken is baking, in a separate bowl toss the peppers, onion, and tomatoes with 2 tbsp souvlaki seasoning and a drizzle of olive oil until fully coated.
After the chicken has baked for 20 minutes, remove the sheet pan from the oven and add the seasoned vegetables directly onto the same pan.
Return the pan to the oven and bake for an additional 15–20 minutes, or until the chicken is cooked through and the vegetables are tender.
Switch the oven to high broil and broil for 2–3 minutes to lightly caramelize everything.
Note: If you prefer your peppers firmer, reduce the first bake time slightly.
Plate the chicken and vegetables, then top with crumbled feta.
Serve with toasted pita and tzatziki.
To stretch the meal further, add a side of lemon rice and roasted potatoes.
