Creamy Chicken, Leek & Pesto Orzo

Ingredients

  • 2 cans cream of chicken soup

  • 1 cup chicken broth

  • 8–10 chicken filets or 3 chicken breasts, sliced

  • 1 leek, thinly sliced

  • 1 tbsp dried parsley

  • 1 tbsp dried minced onion

  • Salt and pepper, to taste

  • 2 cups orzo

  • 1 package Sauce Pantry Basil Pesto, prepared as directed on the package (other pesto will work, but this is our favourite!)

Instructions:

  1. In a crockpot, whisk together the cream of chicken soup and chicken broth until smooth.

  2. Add the sliced chicken filets (or chicken breasts) into the soup mixture, making sure they’re coated.

  3. Top with sliced leeks, then sprinkle with parsley, dried onion, salt, and pepper.

  4. Cover and cook on high for 2 hours.

  5. When there’s about 30 minutes left (at the 1.5-hour mark), bring a pot of salted water to a boil. Add the orzo and cook according to package directions until al dente.

  6. While the orzo cooks, prepare the Sauce Pantry Basil Pesto as directed on the package.

  7. Drain the cooked orzo, then toss it with the prepared pesto until evenly coated.

  8. Plate the pesto orzo and top with the creamy chicken and leeks from the crockpot.

  9. Serve and enjoy!
