Stuffed Pepper Rings

Makes: 8 Prep time: 60 mins Cook Time: 30 mins

Total Time: 90 min

Ingredients

2 large bell peppers sliced into 1 inch rings (8 rings total)

1 half medium yellow onion diced

1 lb lean ground beef

1 540ml can black beans

3 tbsp The Spice Age Let’s Taco Bout It Seasoning

Directions:

  1. In a large mixing bowl, combine the ground beef, onion, black beans, and taco seasoning. Mix well.

  2. Lay out your pepper rings on a parchment-lined tray.

  3. Fill each pepper ring with the meat mixture, pressing the meat firmly into the rings.
    (It’s okay if the meat sits higher than the pepper ring — it will shrink slightly during cooking.)

  4. Place the tray in the fridge and chill for 20–30 minutes, or overnight if preparing ahead.

  5. When ready to cook, preheat your BBQ to 350–400°F, or heat a pan over medium-high heat.
    (Grilling will add extra flavor if you can!)

  6. Cook the stuffed pepper rings like you would burgers, flipping as needed, until the meat is cooked to your desired doneness.

  7. Serve with fresh Mexican slaw or top with avocado, salsa, lettuce, cheese — whatever you love!

  8. Enjoy!
