Creamy Corn, Chicken & Bacon

Ingredients

  • 8 small, thin chicken fillets

  • 1 cup cooked bacon, not crispy

  • 2 cups fresh corn

  • 1/2 cup diced red onion

  • 1 block cream cheese, softened

  • 1 cup milk

  • 1/4 cup chicken broth

  • 2 tsp fresh minced garlic

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 2 tbsp smoked paprika

  • 1 tbsp onion seasoning

  • Cracked pepper (to taste)

    Directions

    1. In a large skillet, heat a drizzle of olive oil. Add the corn and cooked bacon, then season with smoked paprika and 1 tsp garlic. Cook for a few minutes until the corn starts to get some colour. Remove from the skillet and set aside.

    2. Season the chicken with cracked pepper, smoked paprika and onion seasoning.

    3. Add the butter to the same skillet and cook the chicken until browned on both sides but not fully cooked through. Remove and set aside.

    4. Pour the chicken broth into the skillet and scrape up all those delicious browned bits from the bottom.

    5. Add the diced red onion and remaining 1 tsp garlic. Cook until the onion starts to soften.

    6. Add the softened cream cheese and milk. Whisk until smooth and creamy.

    7. Return the partially cooked chicken to the skillet along with any juices. Cover and simmer on low for about 20 minutes, or until the chicken is cooked through.

    8. Spoon the creamy chicken and sauce over your choice of gnocchi, pasta, mashed potatoes or rice, then pile the corn and bacon mixture over the top.

    9. Enjoy!
