Bourbon Vanilla Strawberry Cheesecake Trifle

Ingredients
2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
1 ¾ cups granulated sugar
4 large eggs
2 tbsp bourbon vanilla extract or bourbon vanilla bean paste
1 cup milk
½ cup plain Greek yogurt
Directions
Preheat oven to 350°F.
Line a cookie sheet or jelly roll pan with parchment paper and lightly butter the parchment.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Mix in the bourbon vanilla.
Combine the milk and Greek yogurt.
Alternately add the dry ingredients and milk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined.
Spread the batter evenly onto the prepared pan.
Bake for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
Cool completely and cut into cubes or squares.
Stewed Strawberries
Ingredients
2 cups fresh strawberries, chopped
2 tbsp granulated sugar
Squeeze of fresh lemon juice
Instructions
Place strawberries, sugar, and lemon juice in a small saucepan.
Cook over medium heat for 8–10 minutes, stirring occasionally, until the berries soften and become syrupy.
Remove from heat and cool completely.
Cheesecake Filling
Ingredients
1 block (250 g / 8 oz) cream cheese, softened
½ cup icing sugar
2 tsp bourbon vanilla extract or bourbon vanilla bean paste
473 mL (2 cups) whipping cream
Instructions
In a large bowl, beat together the cream cheese, icing sugar, and bourbon vanilla until smooth and creamy.
Pour in the whipping cream and continue whipping until the mixture is thick, light, and fluffy.
Assemble the Trifle
Spread a thin layer of cheesecake filling in the bottom of a trifle bowl or large serving dish.
Add a layer of bourbon vanilla cake cubes.
Spoon over some of the cooled stewed strawberries and a little of their syrup.
Add a layer of cheesecake filling.
Repeat the layers until all ingredients are used, finishing with cheesecake filling on top.
Garnish with fresh strawberries.

Notes
Chill for at least 1 hour before serving, or overnight for even better flavour.
Starting with a layer of cheesecake filling helps keep the cake moist.
