Strawberry Rhubarb Oat Bar

Makes: 8-12 bars Prep time: 30 min Cook Time Time: 70 min Total Time: 100 min

Ingredients

Oat Bar

1 1/2 cup flour

1 1/2 cup quick oats

1/4 cup white sugar

1/4 cup demerara brown sugar

1/4 tsp salt

3/4 cup melted butter

Strawberry Rhubarb Filling

4 cups chopped rhubarb

2 cups chopped strawberries

1/2 cup sugar

1 tbsp water

2 tbsp lemon juice

Topping

1/4 cup demerara brown sugar

1 tsp cinnamon

Directions

  1. Preheat oven to 350Β°F.

  2. In a saucepan over medium-high heat, combine all filling ingredients. Cook, stirring frequently, until fruit is softened (but not falling apart). Remove from heat and set aside.

  3. In a bowl, mix all oat bar ingredients until a crumbly mixture forms.

  4. Set aside ΒΎ cup of the crumb mixture for topping.

  5. Line a 9x12 baking dish with parchment paper. Press the remaining crumb mixture firmly into the bottom to form the base.

  6. Spread the strawberry rhubarb filling evenly over the base.

  7. Sprinkle the reserved crumb mixture over top.

  8. In a small bowl, mix cinnamon and sugar, then sprinkle evenly over the bars.

  9. Bake for 70 minutes.

  10. Let cool completely before cutting (about 2 hours or overnight for best results).

Serve as-is, or with ice cream or whipped cream. Also very acceptable with a coffee for breakfast πŸ˜‰
