Strawberry Lemonade Poke Cake

Ingredients

Cake:
2 cups flour
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
¾ cup butter
1½ cups sugar
3 eggs
Zest + juice of 1 lemon
1 tsp vanilla
1 cup milk

Strawberry Sauce:
2 cups strawberries
2–3 tbsp sugar
1 tbsp lemon juice

Topping:
1 cup whipping cream
¼ cup powdered sugar
1 tsp vanilla
2 tbsp cream cheese
4 tbsp lemon curd

  • Directions

    • Cake

      • Preheat oven to 350°F and grease a 9x13 pan

      • Cream butter and sugar until light and fluffy

      • Add eggs one at a time, mixing well after each

      • Mix in lemon zest, lemon juice, and vanilla

      • In a separate bowl, whisk flour, baking powder, baking soda, and salt

      • Add dry ingredients to batter in two additions, alternating with milk

      • Mix until just combined (do not overmix)

      • Pour into pan and bake 25–30 minutes, until a toothpick comes out clean

      • Let cool for 10–15 minutes

      Poke + Strawberry Soak

      • Poke holes all over cake while still slightly warm

      • In a saucepan, cook strawberries, sugar, and lemon juice over medium heat

      • Stir and mash until thick and jam-like (10–15 minutes)

      • Let cool slightly

      • Spoon over cake and gently press into holes

      Chill

      • Refrigerate at least 1 hour

      Lemon Curd Cream Cheese Whipped Cream

      • Beat cream cheese and lemon curd until smooth

      • Add whipping cream, powdered sugar, and vanilla

      • Whip to soft–medium peaks

      • Spread whipped cream over chilled cake

      • Add small dollops of lemon curd

      • Drag a knife through to create a swirl

      • Keep chilled until serving
