Strawberry Lemonade Poke Cake

Ingredients
Cake:
2 cups flour
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
¾ cup butter
1½ cups sugar
3 eggs
Zest + juice of 1 lemon
1 tsp vanilla
1 cup milk
Strawberry Sauce:
2 cups strawberries
2–3 tbsp sugar
1 tbsp lemon juice
Topping:
1 cup whipping cream
¼ cup powdered sugar
1 tsp vanilla
2 tbsp cream cheese
4 tbsp lemon curd
Directions
Cake
Preheat oven to 350°F and grease a 9x13 pan
Cream butter and sugar until light and fluffy
Add eggs one at a time, mixing well after each
Mix in lemon zest, lemon juice, and vanilla
In a separate bowl, whisk flour, baking powder, baking soda, and salt
Add dry ingredients to batter in two additions, alternating with milk
Mix until just combined (do not overmix)
Pour into pan and bake 25–30 minutes, until a toothpick comes out clean
Let cool for 10–15 minutes
Poke + Strawberry Soak
Poke holes all over cake while still slightly warm
In a saucepan, cook strawberries, sugar, and lemon juice over medium heat
Stir and mash until thick and jam-like (10–15 minutes)
Let cool slightly
Spoon over cake and gently press into holes
Chill
Refrigerate at least 1 hour
Lemon Curd Cream Cheese Whipped Cream
Beat cream cheese and lemon curd until smooth
Add whipping cream, powdered sugar, and vanilla
Whip to soft–medium peaks
Spread whipped cream over chilled cake
Add small dollops of lemon curd
Drag a knife through to create a swirl
Keep chilled until serving
