Greek Warba Potato Salad
Serves: 4-6 Prep time: 15 min Cook Time Time: 15-25 min Total Time: 30-40 min
Ingredients
2 lbs warba potatoes
1 large bell pepper diced
1 small red onion diced
1 cup crumbled feta
1 large lemon juiced
1 tbsp souvlaki seasoning
3 tbsp extra virgin olive oil
1 tsp herbs crushed garlic
S&P to taste
Directions:
- In a pot, boil the potatoes until tender but not falling apart. 
- Drain and let them cool until they’re comfortable to handle. 
- Cut the potatoes in halves or quarters, depending on their size, and transfer them to a mixing bowl. 
- While the potatoes are still slightly warm, add the lemon juice, souvlaki seasoning, minced garlic, olive oil, and salt & pepper. Stir well to coat. 
- Place the bowl in the fridge to cool further for 10–20 minutes. 
- Once cooled, add the diced peppers, diced onion, chopped parsley, and crumbled feta. 
- Stir gently and serve! 
Note:
 Adding the lemon juice, garlic, and seasonings while the potatoes are still warm helps them absorb the flavors more deeply.
