Greek Warba Potato Salad
Serves: 4-6 Prep time: 15 min Cook Time Time: 15-25 min Total Time: 30-40 min
Ingredients
2 lbs warba potatoes
1 large bell pepper diced
1 small red onion diced
1 cup crumbled feta
1 large lemon juiced
1 tbsp souvlaki seasoning
3 tbsp extra virgin olive oil
1 tsp herbs crushed garlic
S&P to taste
Directions:
In a pot, boil the potatoes until tender but not falling apart.
Drain and let them cool until they’re comfortable to handle.
Cut the potatoes in halves or quarters, depending on their size, and transfer them to a mixing bowl.
While the potatoes are still slightly warm, add the lemon juice, souvlaki seasoning, minced garlic, olive oil, and salt & pepper. Stir well to coat.
Place the bowl in the fridge to cool further for 10–20 minutes.
Once cooled, add the diced peppers, diced onion, chopped parsley, and crumbled feta.
Stir gently and serve!
Note:
Adding the lemon juice, garlic, and seasonings while the potatoes are still warm helps them absorb the flavors more deeply.
