Fresh Herb Potato Salad

Ingredients

  • 3lb bag baby potatoes

  • 1.5 cups sour cream

  • ¼ cup mayonnaise

  • 2 tbsp garlic powder

  • S&P to taste

  • 1 cup chopped fresh parsley

  • ¼ cup chopped fresh chives

  • ½ cup chopped fresh dill

  • Directions

  • Cut potatoes in half and place them in a pot of water. Bring to a boil.

  • While the potatoes are boiling, in a separate bowl, mix sour cream, mayo, garlic, salt, and pepper.

  • Stir in the freshly chopped herbs.

  • Once the potatoes are fork-tender, drain the water.

  • Add the warm potatoes to the creamy herb mixture and toss to coat.

  • Serve warm, or refrigerate and enjoy cold.
